Sunday lunch is usually my time off from the kitchen, so MrM has to either cook or take me out for lunch. After a long walk over the Heath and fast approaching clouds calling off for snow, we decided to head back home. MrM treated me with one of his favourite dishes: quick roast beef with potatoes.
Ingredients for 3 people:
1 fresh rosemary spring (usually also thyme but winter killed mine in the garden)
500g sirloin steak
500g potatoes
1 red onion
extra virgin olive oil
salt
pepper
Preparation:
Slice thinly onion and potatoes, put them in a hot pan and some extra virgin olive oil and a pinch of salt. Let them sweat and steam with a lid on for approx 20min until soft, stirring occasionally and perhaps adding a bit of hot water in case they tend to stick to the pan.
Finely chop the rosemary and thyme and spread them around a chopping board with a good pinch of salt&pepper and a drizzle of extra virgin olive oil. Turn the heat under the empty frying pan up to maximum. Cut the fillet in half lengthways, then roll each piece back and forth so they are completely coated in herbs. Add the fillet to the hot pan with a few good drizzles of olive oil. You must turn it every minute or so and don't forget to seal the ends.
In this way, the meat is ready very quickly so be careful if you like it rare!
I'm not a fan of onions, but I have to admit that it was a delicious addition!
