This homemade bread can be ready in less than 90min. Made using dry yeast, it's well presented, tasteful with typical yeast smell when still hot and it's a quick-healthier fix to replace supermarket options; although still far away from my idea of perfect bread... Am I ready for a sourdough approach?
This recipe is from Vittorio's website, I strongly recommend to watch his video on youtube, very inspirational!
Preparation: Mix yeast, sugar and half flour in a glass bowl; add water a 50° and stir well. Then incorporate the salt and slowly the remaining flour until the dough starts breaking away from the side; if you still have some flour left, add it on while working the dough. Place it on a surface covered in flour and work it for 8-10 min. This video on youtube is very helpful to better understand how to work a dough. Btw, I had pain in my forearms for 2 days!!! Gently move into a tupperware, add the lid on and put in the oven (no heat, no fan, just light on) for 20 min. Then remove from oven, slightly flatten the dough and give it a round shape. Create a cross incision on top using a wet knife (this prevents dough sticking to the blade) and place again in the cold oven with a pot of hot water at the bottom. Turn the heating on at 200° and let it bake for 45 min.
