wholemeal boring muffins

MrM: Have you ever had a muffin that tasted "like nothing"?

If you fancy experimenting this recipe, please bear in mind that:

  1. the muffin will taste strongly of wholemeal flour
  2. it's as plain as you can get
  3. if your other half does't like wholemeal flours he will take this out on you at breakfast!
But if you want to give it a twist, please add some chocolate or nuts or blueberries
Personally I really like them as they are pristine in flavour and not over complicated..

Ingredients for 6 muffins:
120g dark muscovado sugar
250g wholemeal flour for cakes
1 egg
2 tbsp maple syrup
150ml milk
30ml sunflower oil
few drops of vanilla extract
1/2 tsp bicarbonate of soda
1/2 tsp cream of tartar

Preparation:
Mix muscovado sugar, egg and sunflower oil all together then add the remaining ingredients. Whisk until you made a shiny soft dough. Pour in equal part in the muffin tin for 6 and bake for 20' at 180' fan.

I think they do a good job if dipped in hot milk!
