52 weeks project: 36/52 weeks
"Pan di stelle" (bread of stars) is the name of chocolate and almond biscuits that for decades have been a favourite of millions of Italian children (and grown-ups..). This recipe is my own take on these classic biscuits, perfect for dipping in caffelatte as part of a typical Italian breakfast.
Ingredients for 10 cookies:
1 egg (room temperature)
125g unsalted butter
125g soft brown sugar
100g grated dark chocolate (or 50g cocoa powder + 2 tbsp maple syrup)
40g ground almonds
200g plain white flour
1/2 tsp cream of tartare + 1/2 tsp bicarbonate of soda (or 1 tsp baking powder)
Preparation:
Melt the butter and whisk in the sugar to have a soft cream, add the egg, chocolate and ground almonds. Mix well and then slowly whisk in the flour with the baking power.
Try to give the cookies an almond shape and bake for 15-20 minutes in a preheated oven at 180˚.
Take the cookies out and once cooled dust with icing sugar.
