Choy sum w/prawns & rice noodles

First time shopping in Chinatown and I have to admit I've been positively impressed! Fresh tasty vegetables and fruit, far more affordable than in a supermarket.
My sister guided me through the differences, what is good, which type of noodle is for what and she picked up the ingredients for dinner and make me prepare it!

Ingredients for 4 people:
400g fresh rice noodles
340g chinese choy sum 
350g fresh prawns
1/2 cup teriyaki sauce
2 tsp honey

Preparation:
Marinate the prawns for 1 hour in a bowl with 1/2 cup of teriyaki sauce and 2 teaspoon of honey.
Rinse and cut the choy sum into 5cm size. Separate the stem and leaves. Place the stems in a pan with boiling water and let it cook for 8-10 minutes until tender. After 5 minutes add the fresh rice noodles and with a wooden spoon gently separate the noodles.
In a wok stir-fry the leaves and after a couple of minutes pour in the prawns with the sauce. Throw in the stems and stir together for 1-2 minutes. Serve immediately.
