My sister came over for the weekend and she shamelessly asked to be spoilt as she missed our time together while she was in China. A different breakfast each day, from blueberry&almond muffins to chocolate&almond cookies and quite a tradition pancakes on sunday morning.
This is the easiest recipe for pancakes, it works magically on both savoury and sweet!
Ingredients for 4 pancakes:
1 egg
250ml milk
150g plain white flour
1 small pinch of salt
Preparation:
Whisk all the ingredients very well together and quickly to form some bubbles. Those will make the pancakes more fluffy.
Preheat a 20cm frying pan, melt a small knob of butter and pour a ladle of mix. Let it cook until the sides will stick out from the pan then overturn the pancake to cook on the other side. The cooking time is approximately 6-7 minutes on a low heat. Repeat all the steps, the mix should last for 8/9 pancakes.
Preheat the oven at 50˚C, cover a serving plate with greaseproof paper and place in the oven. Once a pancake is ready, move it to the plate in the oven, this will keep the pancakes warm.

Top as you wish! We had on the table different types of jam (raspberry, nutmeg, plums, guava), maple syrup, fresh raspberry/strawberry/blueberry, greek yogurt.
