Half of our friends are vegetarians and when we arrange a party - Carnival party tonight! - we can't simply buy some italian cured meat for antipasti, some vegetarian options are a must to have on the table.
Mum usually prepares a frittata when she is in a hurry for dinner. Frittata is a traditional italian dish, it's egg-based and can be customised with meat, veggie, cheese or anything your fantasy brings!
Ingredients for 8 people as a starter, 4 people as a main:
6 eggs
350g frozen chopped spinach
200g feta cheese
200ml creme fraiche
Preparation:
Mix all the ingredients together and pour over a baking tray lined with some baking paper. Bake in the preheated oven at 180˚ for 40 minutes. Let it cool down in the oven for 20 minutes; this way the frittata will remain fluffy. Serve warm or cold as you prefer.
Suggestion: don't add any salt to the mix, the feta cheese is salty enough.
