mum's apple pie

On Sunday, I came back from Milan with my mum, sort of packed in the suitcase :) 
She took possession of the kitchen straight away, mastering, giving orders and making me doing things... we started the afternoon with an apple pie.

Ingredients:
2 apples
200g sugar
2 eggs
200g plain white flour
100ml sunflower oil
200ml milk
few drops of vanilla extract
1 tsp of cinnamon 
1 tsp cream of tartar
1 tsp bicarbonate of soda

Preparation:
Peel the apples and remove the core and seeds and roughly dice it. Beat eggs and sugar and then add all the remaining ingredients.

Paper a 25cm round cake pan with baking parchment and pour over the mix.
Bake in a preheated oven at 180˚ for 35 minutes. Check with a wooden stick, if it comes out dry the cake is ready.

You can either serve warm with ice-cream or custard, or cold with a freshly brewed cup of tea.
