I really can't believe mum made me eat artichokes, it feels like she is putting on a great effort in changing my perspective on this flowery veggie. Sort of what I'm doing with MrM on the pumpkin subject. 
This recipe is so simple but so tasty!!! I will for sure replicate on my owm.

Ingredients for 3 people:
6 artichokes
100g grated parmesan
2 eggs
100g grated dried bread
salt&pepper

Preparation:
Mix the parmesan, eggs and grated bread in a bowl to form a uniform creamy batter.
Use some gloves to peel off external leaves, cut the stalks to make the artichokes stand alone, and trim off approximately 2 inches from the top leaves. Place them in a bowl with some water and lemon to prevent them turning black.

Open up the leaves as a flower and fill in with the mixture, let it set for a couple of minutes and refill if necessary. Sprinkle some grated parmesan on top to get a crusted effect once cooked.

Drizzle some EVO oil over a pressure cooker and cook the artichokes for about 15 minutes. Do a "ready-cooked" test on the stalks, if a fork pinches them easily they are ready.

Stuffed artichokes can work well on their own with some salad, but we enjoyed them with some baked salmon as we were starving after a day of sightseeing!
