Tuesday night is my trial&error time in the kitchen. MrM is usually out and I have some time for myself. There is always a long list of things I aim to do and I usually end up cooking all the time!
Ingredients for 12 meringues:
300g frozen chopped spinach
250g ricotta
100g grated parmesan
50g ground bread crumbs
150g creme fraiche
salt & pepper
Preparation:
Mix all the ingredients together. Adjust to taste on salt&pepper. Pour the mix in a sac-a-poche and form meringue-like heaps.
Preheat the oven at 180˚fan and cook for 35 minutes.
Those veggie meringues are pretty ugly at sight but taste wonderfully! Crispy outside, fluffy inside, they are a fancy starter or veggie main.
