MrM is a little tired of my light breakfast cakes, and to be honest I'm too! Gladly he took over in the kitchen this weekend!

Ingredients for 18 muffins:
140g unsalted butter
200g soft brown sugar
280g white plain flour
1 egg room temperature
280ml buttermilk
2 tbsp maple syrup
150g chocolate chips
1 1/2 baking powder
1 bicarbonate of soda

Preparation:
Preheat the oven at 180˚.
Cream softened butter with sugar, mix in the egg, fold in the flour into batches using the buttermilk to soften the mix as you go. Add the maple syrup, bicarbonate and baking powder; make sure the batter is thick enough and well mixed. Add in the chocolate chips and spoon into the muffin tin lined with paper cases.
Bake for 20-25 minutes, and watch them explode in the oven!

They will keep in an air-tight container for 3 to 4 days if they last that long...!
