oat blueberry muffins

Despite I started dieting for summer, I still need something sweet... but healthier, and this opens doors to experiments!

Ingredients for 12 muffins:
100g oats
125g white plain flour
125g soft brown sugar
1/2 tsp salt
1 egg (room temperature)
250ml buttermilk
50ml sunflower oil
1/2 tsp cream of tartar + 1/2 tsp bicarbonate of soda (or 1 tsp baking powder)
150gr blueberry

Preparation
Preheat the oven at 180˚.
Mix the buttermilk with sugar and salt, add in the egg, fold in the flour into batches using the sunflower oil to soften the mix as you go. Add cream of tartar and bicarbonate; make sure the batter is thick enough and well mixed. Add in the blueberry and oats and spoon into the muffin tin lined with paper cases.
Bake for 20-25 minutes, and watch them explode in the oven!
