strawberry&pimms tiramisu

Ingredients for 4/6 people:
400g fresh strawberries
250g mascarpone
100ml Pimms + 1 tbls
125g caster sugar
1 egg (room temperature)
200g Savoiardi (ladyfingers)

Preparation:
Separate white and yolk, whisk the white until stiff and add the mascarpone; mix well add the yolk, sugar and a tbls of Pimms. Whisk until the cream is soft and fluffy.

In a blender, pour 100ml Pimms and 200g strawberries, blend to form a smooth juice. Wash, drain and slices the remaining strawberries, keeping aside the tops for decoration.

Get the serving dish ready and dip one savoiardo at the time in the juice on both sides until nicely soaked but not soggy. Layer these into the dish until covering it then spread over half of the creamy mixture and arrange the sliced strawberries on top.
Repeat with another layer of savoiardi and cream and finish strawberry to decorate.

Great summer dessert with a glass of Prosecco!
