Ingredients for 4 people
150g azuki beans
350g diced butternut squash
80g petit pois
150g quinoa
30g breadcrumbs
EVO oil
salt&pepper to taste
Preparation
Soak the beans overnight, wash with fresh water and cook for 45 min in boiling water (not salted). In a separate pan cook the squash and petit pois until tender but still crunchy, season to taste and set aside. Prepare the quinoa (cook boiling water for 15 min, use water in double amount vs the quinoa quantity). Once all the ingredients are ready, mix together in a bowl and prepare patty-like ball, dust well with breadcrumbs. Pour some EVO oil in a frying pan and quickly cook the burgers for 5-10minutes until golden and crusty. Serve immediately with rocket salad.
