Ingredients for 2 people
250g fresh spinach
1 radicchio
100g taleggio
180g arborio rice
a dash of amarone wine
50g unsalted butter
salt to taste
preparation
Slice the radicchio and cook with a knob of butter and a pinch of salt. When it is softening up, add the dash of Amarone, turn up the heat until the radicchio is well cooked but yet reddish.
Boil and salt water and prepare the white rice with a knob of butter. In a separate pan prepare the spinach with butter and salt, after 5-7 min when ready well drain and we aside.
2-3 minutes before the rice is ready add the taleggio and finish cooking. Add a lid on top and let it rest for 2-3 minutes. Plate the rice and on sides the spinach and the radicchio. Serve immediately.
