Fregola with artichoke and prawns

Ingredients for 2 people
2 violet artichokes
150g raw king prawns
160g fregola (medium grain)
1/2 lemon juice
EVO oil
Salt and pepper to taste

Preparation 
Remove all hard parts in the artichokes, be brutal and remove 2 rounds of leaves more than you think, cut and bin the top part, then cut the centre in small pieces. Use a big bowl with cold water and the lemon juice to place the artichoke pieces and prevent darkening. Peel the stems with a potato peeler and cut into small chuncks.
Add a drizzle of EVO oil to a pan with a pinch of salt and pan fry the artichokes until tender. 
In a separate pan boil 1.5l of salted water and prepare the fregola (it should take approx 8-10minutes).
Preheat a wok, place the prawns with a drizzle of EVO oil and add both fregola and artichoke, pan fry for 3-4 minutes until the prawns are bright pink. Serve immediately.
