Ingredients for 2 people:
240g mix cubes of swordfish and tuna
1 large sweet orange
75g sandfire
1 tbsp butter
salt & pepper
EVO oil
Preparation:
Slice and cut into small cubes the fish pieces, move to a bowl and squeeze the orange juice avoiding the pips to get into the mix. Drizzle some EVO oil (a sicilian oil will do a great job with its lemony flavour) and grind salt and pepper. Mix well all together, cover with cling film and let in rest in the fridge for a couple of hours.
In a pan melt the butter and stir-fry the sandfire. Arrange on a serving plate to form a base for the mix, let it cool down before adding the tartare on top.
The ingredients are for a starter, if you double the quantities could be a perfect tasty healthy main.
