Ingredients
110g wholemeal flour
35g cocoa nibs
few drops of vanilla extract
1 large egg
40g ground almonds
75g apple juice
100g sultanas
1/2 tsp bicarbonate of soda
1/2 tsp cream of tartar
Preparation
Boil 200ml water and then simmer in the sultanas for 10-15min to release natural sweetness into the water.
Mix all other ingredients in a bowl, add the sultanas and their water.
Preheat the oven at 190' C fan.
Add the bicarbonate and the cream of tartar to the mix and place in a tin layered with baking paper.
Bake for 20min.
